Already high in protein, we love this #quinoa salad from well plated, the perfect side dish OR main. We added a little of our PowerBlends Goji Coconut for more #fiber, #omega3s, #plantbased protein and a delicious tropical touch. The honey, lime dressing gives this salad a great kick and the fruit makes the texture a little more robust than your average quinoa salad. AND it's easy. Checks every box.
2 tablespoons honey (use maple syrup or agave to make vegan)
2 tablespoons lime juice
1/4 teaspoon kosher salt
1. Prepare quinoa according to package directions. Fluff and place in a large serving bowl, then let cool slightly. In a small bowl or measuring cup, stir together the dressing ingredients: honey, lime juice, and salt.
2. Trim and quarter the strawberries, then add them to the bowl along with the blueberries almonds and mint. Pour the dressing over the top, then toss gently to combine. Place in the refrigerator until ready to serve.
