Bitter sweet and so good to eat

Unless you live on the west coast, the abundance of local, seasonal greens comes around only a few times a year. And right now is that time - perfect to integrate our wholistic approach to eating 'of the earth'.  Enjoy what's in abundance and what's available. 

One of the greens we've been enjoying is dandelion and its unique bitter flavor. And did you know that bitter is the word for the Ayurvedic taste that your body is looking for in spring to naturally detox winter stagnation? 

Check out this super simple seasonal salad where we've sweetened up dandelion's bitter taste with a few types of citrus, threw in an onion for complexity of flavor and added nuts for a little savoury sensation. 1 bunch dandelion greens, washed, dried and trimmed 

1 pink grapefruit

1 orange

1-2 handfuls pecan halves or walnuts

1/4 small red onion

3 tbsp of Goji Coconut PowerBlend

Dressing - whisk together: 

2 tsps honey 

1 organic lime, juice and zest 

1/4 tsp paprika

1 tsp salt 2 tbsps olive oil 


1. In a bowl, whisk together the honey, lime juice, lime zest, smoked paprika, salt and olive oil.

2. Cut the dandelion greens in half and transfer to the bowl with the dressing.  Toss the greens with the dressing and let sit for 10 minutes.

3. Transfer the dandelion greens to a platter and top with grapefruit and citrus segments, pecan halves, and red onion.


Enjoy - makes roughly 4 servings.
